Sukhi Aloo ki Sabzi

I prepared this Sukhi Aloo ki sabji in the morning for breakfast, along with parathas. Everybody liked it so much that they demanded it for lunch too. Thankfully I had prepared it in large quantity, so will be enough for lunch too. I suggest you to try it out (and yes prepare it little more than you actually require =)).

Ingredients:

5-6 potatoes; boiled, peeled and coarsely chopped,

2 onions; cut into half and thinly sliced,

1 green chilli,

5-6 cloves of garlic,

1″ piece ginger,

1 tomato; finely chopped,

1 tsp mustard seeds (rai),

1 tsp cumin seeds (jeera),

A pinch of urad dal,

1/4 tsp asafoetida (heeng)

7-8 curry leaves,

1/4 tsp turmeric powder,

1/2 tsp red chilli powder,

Salt to taste,

Oil for tempering.

Method:

Grind together green chilli, ginger and garlic. In a kadhai, heat around 1/4 cup of oil on low-medium flame. Add urad dal, mustard, cumin, asafoetida, curry leaves. Stir and add ground ginger-garlic-chilli paste. Saute for 2 minutes on low flame. Then add onion and saute until light brown. Add turmeric powder, red chilli powder and tomatoes. Cook until tomatoes soften. Then add chopped potatoes, mix well. Add salt, stir, cover and cook for 2 minutes. Serve with puris or parathas.
