Thai Golden Prawns
500gms fresh prawns or shrimps,
3 medium size red chillies; finely chopped,
1/2 cup chopped coriander leaves,
2 egg whites,
1 tbsp finely grated ginger,
2 cloves garlic; finely chopped,
1 tbsp fish sauce,
1/4 cup corn flour or rice flour,
1/2 cup vegetable oil.
Peel and devein the prawns. In a bowl combine chopped chillies, coriander leaves, egg whites, ginger, garlic and fish sauce, mix well. Drop the prawns and marinate them for 15-20 minutes. Then add the flour to this mixture and mix with a spoon to coat the prawns properly. Now refrigerate this mixture until ready to be fried.
Heat oil in a wok or a pan. Scoop out 1-2 prawns and drop into the hot oil. Turn them occasionally with tongs and fry until they are golden brown all over and nice crisp. Drian on paper towels and serve hot with chilli sauce.
