Tomato Rice

Tomato Rice is a rice recipe with tangy flavor of tomatoes. It is a simple preparation that take only 10 minutes. Can be prepared in a hurry and a good option for lunch box.

Ingredients:

1 cup raw rice,

2 onions; cut into halves and sliced,

3-4 tomatoes; cut into halves and sliced,

1 tsp cumin seeds (jeera),

1/4 tsp turmeric powder,

3/4 – 1 tsp red chilli powder,

Salt to taste,

Oil for frying.

Method:

Cook the rice with little salt and lots of water till tender but firm. Drain and set aside. Heat around 1/4 cup oil in a kadhai (wok). This recipe needs more oil than normal. Add jeera and let them splutter, then add onion and saute on medium flame till soft. Then add the turmeric powder, red chilli powder, stir and fry for 2 minutes. Now add the tomatoes, cover and cook on medium flame till they are nice soft and the masala starts leaving oil from the sides of the kadhai. Now add drained rice, little salt (since when we boiled rice we added some salt to it), stir and cover and cook for 5 minutes on low-medium flame. Uncover and stir occasionally. Serve hot.

TIP:

This recipe could be made from leftover rice too.
