Veg Paratha

Ingredients:
1 cup whole wheat flour,
1 carrot, grated,
1 raddish, grated,
4 big leaves of palak (spinach), finely sliced,
1/4 tsp jeera,
1/4 tsp red chilli powder,
Handful of coriander leaves,
A pinch of amchur (dry mango powder),
1/2 cup yoghurt,
Oil,
Salt according to taste.

Method:
Squeeze out the juice from grated carrot and raddish and keep both. Add sliced spinach, salt, chilli powder, jeera,
coriander leaves and amchur. Mix well and keep aside. In a bowl take wheat flour, add 2 tsp oil and mix. Take yoghurt and add juice of carrot and raddish and mix it with the flour and make dough. Roll out small rotis, keep the filling in the centre, seal and roll out parathas. Fry at medium heat and eat along with green chutney.
