Vegetable Pulao

Ingredients:
1 cup Basmati Rice,
1/4 cup Mint,
1 Onion, sliced,
1″ piece ginger, finely chopped,
2 cloves garlic,
4 green chillies,
2 tsp grated coconut,
1 cup mix vegetables(Carrots,beans,peas,cauliflowers),
Salt to taste,
1″ piece dalchini (cinnamon),
2 laung(cloves),
3-4 kali mirch(peppercorns),
2 tej patta(bay leaves),
2 tbsp ghee(butter),
2 cups water,
1/4 cup cashew,
4 slices of Bread.

Method:
Soak The Basmati Rice in water for half an hour before cooking. Wash & drain the rice.
Cut the carrots and beans length-wise. Wash green peas and cauliflower florets.
Wash & dry the mint. Blend Mint,ginger,garlic,whole garam masala,coconut & half the onion to a fine paste.

In a pressure cooker heat some ghee or butter. When it starts melting add bay leaf and the paste let it cook for a couple of minutes. Add the vegetables fry for 5-7 minutes. Add rice & salt and mix well. Fry till all the rice is coated with the masalas and vegetables. Add the water & cover the lid. Pressure cook upto 2 whistles.

In a seperate pan add a little butter & fry the cashewnuts (broken into pieces) and keep aside. In the same pan fry the onions till it turns translucent & brown. Cut the bread it small cubes,deep fry or shallow fry them as per your choice. Your croutons would be ready.
Garnish the rice with cashews,onions and croutons. Serve hot with any raita or yoghurt salad of your choice.
