Yellow Rice

Ingredients:

400gms rice,

1 medium size tomato, cut into half and sliced,

1 small capsicum, chopped and boiled,

1/4 tsp turmeric powder,

50gms coconut milk powder,

Water,

Oil,

Salt to taste.

Method:

Wash the rice and soak in water for some time. Dissolve around 500ml of water in the coconut milk powder. In a pan, mix rice, coconut milk and turmeric powder and cook the rice. The coconut milk should cover the rice by around 4 cms. Cover with lid and stir occasionally until its almost cooked. Then add capsicum and sliced tomatoes to it. Mix well, cover for a minute till rice is dry and then remove from flame.
